Strawberry Spinach Salad

Dressing:
Zest from one lemon finely chopped\
2 tbsp. fresh lemon juice
2 tbsp. vinegar
1/3 cup sugar
1 tsp. poppy seeds
In a serving bowl, combine the following salad ingredients:
1- 6 oz. pkg. baby spinach
1/2 medium cucumber-seeded, halved, and thinly sliced
1 small red onion-halved, thinly sliced
1/4 cup slivered almonds
1 cup strawberries sliced thinly or cut in quarters
Toss with dressing just before serving. |
