Dried Cherry Chicken Salad

1 cup dried tart red cherries
4 chicken breast halves (about 1 1/2 lb.) - cooked and cut into small 1/2" pieces
3 stalks of celery-sliced thin or chopped
1 cup chopped pecans
1 1/4 C good quality mayonnaise
1/2 C chopped parsley
salt and pepper to taste
Mix ingredients together and refrigerate for at least 2 hours. Serve chicken salad on fresh croissant rolls. Yum!
